Welcome to our EVOLUTION reservation system, the channel through which we recommend you make your reservation.

Once the process is completed, you will receive a confirmation email, if not, try again, your table will not be reserved.

• At the time of making your reservation and in order to confirm it, will proceed to make a payment of €60.00 per diner, corresponding to the prepaid ticket. In the event of not being able to attend, you must notify it at least 48 hours prior to the reservation and notify it in writing from the reservation confirmation email or directly through reservas@coboestratos.com. In this way, the total amount of the prepaid ticket will be reimbursed, except for its management costs (-3.00€/per person).
• Nevertheless, If the total or partial cancellation of the reservation occurs during the last 48 hours of the reservation, we reserve the right not to refund the €60.00 per diner of the prepaid ticket charged to the credit/debit card provided at the time of your reservation.
• In the event of a no-show, or the same number of guests noted in the reservation not attending, we reserve the right not to refund the €60.00 per guest of the prepaid ticket charged to the credit/debit card provided in the At the time of your reservation, make a charge in it for the remaining amount until completing the total cost of the reserved menu(s).
• Know that 48 hours before the reservation, we will contact you to confirm your reservation and assistance, it is important that we contact you, otherwise your reservation may be cancelled.
• We do not accept baby stroller nor do we have high chairs, Evolution is not a space for children under 10 years old, If you want to come accompanied by children under this age, know that they will pay for the menu in full.
• Our tables are maximum 4 people, if you want to book for more, please contact us.
• At Evolución we only offer a tasting menu which will be served to the full table. Due to the complexity of the menu, at the moment, it has been impossible for us to make adaptations for allergies and intolerances. We also do not have a menu for vegans or vegetarians.
• A tip, if it is full the day you want to make your reservation, sign up for the waiting list, we take it into account.
