His cuisine is a reflection of his way of understanding the world, of someone whose best memories are associated with the smell of marine iodine and the Burgos forests. Solid cuisine, from the roots, tasty and refined, but above all it is a deep-rooted cuisine, truly, without concessions.

Michelin Star

The only chef to achieve 1 Michelin Star in the city of Burgos, he leads the Cobo Estratos gastronomic project. Technique, flavor and aesthetics.

Our project

The Evolution project has been able to be carried out thanks to the direct collaboration of Carlos Díez Lomana, professor at the University of Burgos. Archaeologist Eduald Carbonell, paleontologist José María Bermúdez de Castro and paleoanthropologist Juan Luis Arsuaga have also helped.

With them he has understood what human evolution has been like and how each of the feeding processes have appeared.
