Everything has led me to where I am now, to build COBO ESTRATOS, the most faithful reflection of me.
Two totally different spaces
A cuisine that will go from his native Cantabria to his adopted city, Burgos. A menu full of classic dishes based on stews, stews, salted meats, preserves... Always made with an excellent quality product.
A restaurant to discover human evolution in an interactive, gastronomic and sensory way. It will have a menu based on six stages of human evolution—Africa, Atapuerca, Altamira, Neolithic, Rome and Mestizaje
